Watermelon, Strawberry and Asparagus Salad

Sydney is turning the sunshine back on today and it’s feeling a lot like summer again. In celebration, we’re eating this refreshing watermelon, strawberry and asparagus salad for dinner. It’s delicious and super easy to prepare.

 

Watermelon, Strawberry and Asparagus Salad

Ingredients
  • 1 bunch of asparagus, ends trimmed
  • 10 strawberries, sliced
  • 1 cup watermelon, chopped
  • ½ cucumber, sliced
  • 2 cups kale, roughly torn
  • ¾ cup feta, crumbled
  • 10 leaves basil, chopped
  • Dressing:
  • 1 tablespoon olive oil
  • 1 cup balsamic vinegar reduction
  • Juice of 1 lime
  • salt and pepper to taste
Instructions
  1. Chopped the asparagus into 5cm pieces and steam over boiling water.
  2. Once cool, add the asparagus, strawberries, watermelon, cucumber, kale, feta and basil leaves in a salad bowl.
  3. Mix together the dressing ingredients and pour over the top.
  4. Add salt and pepper to taste and serve.
