We’re reminiscing about summer here in Sydney! When the sky is blue, the water is fresh, the sun is hot and the afternoon calls for an icy cold drink. With the watermelon’s producing the goods, we’re whipping up afternoon mojitos and relaxing into the evening.
Watermelon & Blueberry Mojitos

Ingredients
- ½ a small watermelon cut into chunks
- 2 tablespoons of rosewater essence
- 1 tablespoon coconut sugar (can use raw sugar)
- Juice of 1 lime
- 1 bunch mint, tough stems removed, 6 sprigs reserved for serving
- 1¼ cups white rum
- 2 cups soda water
- 1 cup blueberries
- 4 cups of ice cubes
Instructions
- Blend the watermelon chunks, rosewater essence, coconut sugar, lime juice, mint and rum in a blender until smooth.
- Fill 6 glasses with ice cubes and pour the mix evenly across them. Top with soda water and garnish with mint sprigs and blueberries.
- Enjoy in the sunshine.
