Raw Tomato Relish

In anticipation of Summer and tomato season, we thought we would share our well-tried and tested raw tomato relish. Perfect, for warm sunny mornings with poached eggs and thick sourdough.

 

Raw Tomato Relish

Ingredients
  • 500g tomatoes - we prefer cherry tomatoes, but whatever you've got growing will work
  • 1 jar of semi dried tomatoes
  • 2 sprigs of fresh Oregano
  • 2 sprigs of fresh Thyme
  • ½ cup of fresh Coriander leaves
  • Juice of 1 Lime
  • 1 onion
  • 3 knobs of garlic
  • A dash of Tamari sauce
  • 1 teaspoon of raw sugar (or coconut sugar)
  • A good lashing of salt and pepper
  • *If you’ve got it growing - add some ginger or chilli for some extra kick.
Instructions
  1. Place all ingredients into a food processor and blitz for 1 minute, or until finely chopped
  2. Spoon into a sterilised jar and keep in the fridge for upto 10 days
