Ingredients
  • 500g Berries - we prefer raspberries, but any kind of berry that you’ve got growing is good
  • 2-3 tablespoons of stevia or sugar
  • 1 tablespoon of honey, maple syrup or rice malt syrup
  • Juice of 1 lemon
  • 1 tablespoon water
  • 1 tablespoon of vanilla extract
  • ½ cup of chia seeds
  • *If you’ve got it - add some monstera deliciosa if you want to add some tropical flavour.
Instructions
  1. Place all ingredients except for the chia seeds, into a pot and simmer on medium heat for 2-4 minutes or until the stevia/sugar has completely dissolved. Add in the chia seeds and mix well.
  2. Decant into sterilised jars, leave overnight for the chia seeds to swell and jam to set.
  3. Keep in the fridge. Spread it on toast, drop it on yoghurt, eat it by the spoonful or use it on your Sunday morning pancakes.
