We’re yet to find anything more comforting that a piece of thick sourdough with a good dollop of butter and berry jam. At our place, we’ve been getting stuck into this berry chia jam.

Ingredients
- 500g Berries - we prefer raspberries, but any kind of berry that you’ve got growing is good
- 2-3 tablespoons of stevia or sugar
- 1 tablespoon of honey, maple syrup or rice malt syrup
- Juice of 1 lemon
- 1 tablespoon water
- 1 tablespoon of vanilla extract
- ½ cup of chia seeds
- *If you’ve got it - add some monstera deliciosa if you want to add some tropical flavour.
Instructions
- Place all ingredients except for the chia seeds, into a pot and simmer on medium heat for 2-4 minutes or until the stevia/sugar has completely dissolved. Add in the chia seeds and mix well.
- Decant into sterilised jars, leave overnight for the chia seeds to swell and jam to set.
- Keep in the fridge. Spread it on toast, drop it on yoghurt, eat it by the spoonful or use it on your Sunday morning pancakes.
