Grape Pizza

This is an excerpt from our book Slow Down and Grow Something.

This is one of those recipes that at first sounds a bit left of centre, but afterwards makes total sense, all the flavours work so beautifully together. It is a truly simple dinner that tastes simply delicious. The final product is sweet, warm and comforting, as the roasted grapes replaces their bright, citrusy flavour with a deeply sweet, decadent taste. And the cheese, need we mention the cheese?

Grape Pizza
Serves: 1 Pizza
  • For dough
  • 1 cup warm water
  • ½ tablespoon yeast
  • ½ tablespoon salt
  • 3 cups flour, divided
  • 2 tablespoons olive oil
  • For topping
  • 2 cups seedless red grapes, halved lengthwise
  • ¼ cup gorgonzola cheese
  • ¼ cup parmesan cheese
  • ¼ cup mozzarella cheese
  • 1 tsp sea salt
  • ¼ tsp pepper
  • 2 tablespoon olive oil, divided
  • ½ cup rosemary leaves
  1. Pre-heat oven to 180*C.
  2. In a medium sized bowl, mix warm water and yeast. Let sit until foamy, (usually about 5-8 minutes).
  3. Add in 1 cup of flour and the salt, stirring with a spoon until the dough comes together but is still sticky.
  4. Using your hands, on a floured surface, form the dough into a ball. Knead the dough for 5 minutes or until smooth.
  5. Rub the same bowl with olive oil and place the dough inside. Cover bowl with tea towel and place in a warm place for 1-2 hours or until doubled in size (we sit ours on top of the fridge).
  6. In a small bowl, toss grapes with salt, pepper, 1 tablespoon of olive oil, and rosemary leaves. Place them on a rimmed baking sheet and bake at 180*C for 10 - 15 minutes, until skins begin to burst open. Remove grapes and leave the oven turned on.
  7. Line a pizza baking tray with baking paper and then grease with olive oil.
  8. Remove dough from bowl and add more flour as needed (a tablespoon at a time) to alleviate the stickiness of the dough if needed.
  9. Transfer dough to baking tray, pat out evenly with your fingers and stretch into a round.
  10. Coat top of pizza dough with 1 tablespoon of olive oil and sprinkle with a pinch of salt.
  11. Evenly spread with cheeses and drained grapes.
  12. Bake pizza at 180*C for about 10 - 12 minutes, or until the edges begin to lightly brown and cheese begins to bubble.
